Made with fresh seafood delivered directly from fishermen in Hayama, this sashimi (raw fish) platter allows you to experience the flavours of the various seasonal fish in Tsukiji.

Mix freshly grated wasabi with soy sauce to add spice to the fish when you eat it.

A delicious meal made with whole fresh fish that has been delivered directly from the fishermen and grilled in a salt casing. You can also taste the umami from the fish infused with kombu (kelp) flavour.

If you break the fish up with the mallet, you will find high quality protein fish meat infused with kelp inside.

An all-in-one pot rice meal cooked to perfection with seasonal ingredients delivering a refined flavour.

This pot is cooked for 20min at the table in front of you. When it has finished cooking, add pepper and salt to your liking as well as shallots, before eating.

 About Us / Welcome Message

We are a restaurant where you can enjoy drinks along with natural seasonal ingredients cooked in the traditional Japanese kaiseki style. We are a restaurant named for the transitory nature of things, with our name drawing on Japan's unique concept of beauty. Combining the umami of our dishes that maximise the unique characteristics and rich flavours of our ingredients, with an array of alcohol with a focus on Japanese wine but also including champagne and wine, ours is a restaurant where you can enjoy the transitory nature of time along with the changing seasons.
