We recommend cooking the ezo abalone with butter, cooking the turban shell in its shell with a little soy sauce, and enjoying other dishes such as Iberian pork and young chicken thigh meat with yuzu pepper paste or our homemade sweet sauce.
Eat the marbled wagyu with our beef sauce or rock salt to bring out the flavor of the meat. If you want more of a kick, we can also recommend spreading it with a little yuzu pepper paste.
While simple grilling and eating the char fish is delicious, to make your warm sake (rice wine) even more aromatic and delicious, try grilling the fish until it is almost completely charred and adding it to your sake whole.
Keeping the road to Mt Takao on your left, go approximately 4 kilometres up the Koshu road and you'll see the entrance to Gonsuke village. You'll find the 2 hectare grounds dotted with our private annexes, our carp-filled Kappa pond, and Jizo statues. Whoever you are, once you enter, you are part of the Gonsuke village community. Use the map at the entranceas a guide to stroll to a private annexe and enjoy slowly grilling your meal over a traditional sunken hearth while you spend time with special friends. Our sunken hearths are prepared just the way they were when Japanese cooking originated from them.
