Utilizing local produce
Kesen-numa ramen is a local dish eaten in Kesen-numa City in Miyagi Prefecture.
There isn’t anything specific about Kesen-numa ramen and that is what sets it apart from ramen dishes in other areas.
Depending on the restaurant, you can find completely different types of ramen dishes, for example pike ramen made using stock from pike fish, or shark fin ramen made with shark’s fin.
The one thing they all have in common is that they are made with produced grown in Kesen-numa.
It wouldn’t be overstating it to say that Kesen-numa ramen was created to make practical use of available ingredients in an area famous for its fishing industry (pike and shark - for shark’s fin - are particularly bountiful).
